Lemon Mustard


Here’s a quick, easy way to make a wonderful lemon-flavored prepared mustard unlike anything you can buy. Use it on vegetables, beans, or tofu or to add flavor to soups or sauces.


Ingredients:

1/2 cup yellow mustard seeds, ground
1 tsp. rosemary, ground
1 tsp. white pepper, ground
1 tsp. wild or commercial thyme, ground
4 cloves garlic, crushed
1 dried ancho chili pepper, seeds and ribs removed, chopped
1 T powdered mustard
1/4 cup red wine vinegar
1 tsp salt
1 cup water
1/8 tsp liquid stevia

Directions:

1. Bring all ingredients to a boil in a saucepan over medium heat, stirring constantly.

2. Reduce the heat to low, cover, and simmer five minutes, stirring occasionally.
Transfer to a jar and chill.

Makes 1-1/2 cups
