Here's a simple way to prepare hen-of-the-woods so it resembles spicy, Cajun-style crabmeat. You can enjoy it as a side-dish, use it in recipes that call for crab meat, or freeze it. 30 cups hen-of-the-woods mushroom, sliced
1/2 cup seafood seasoning
1/4 cup chili paste or 1 tbs. cayenne hot pepper, or to taste
1/4 cup olive oil
1/4 cup fresh dill weed, chopped
2 tbs. tamari sauce
The juice of 1 lemon
Mix all ingredients together and bake 45 minutes in an oiled casserole dish in a preheated 350° F oven.
