Wineberry Sherbet

Here's a wonderfully simple summer refresher you’ll love.

2-1/2 cups wineberries or other raspberries
2 cups water
1/4 cup canola oil
1/4 cup glycerin, honey, barley malt, or rice syrup
1/4 cup raw cashews
1 tsp. liquid stevia
1/2 tsp. salt
1/2 tsp. raspberry extract (optional)

1. Purée all ingredients in a blender.

2. Strain through a strainer and discard the seeds.

3. Chill (or begin with chilled ingredients), pour into an ice cream machine, and run until done.

Makes 5-1/2 cups

Preparation Time: 15

Ice Cream Machine Time: About 60 minutes
